We primarily grow and deal in coffee, cardamom, pepper, vanilla and stevia. Descriptive details and prices of these products are as below. ::: Coffee :::

Our main product is coffee, for both of the main coffee species - coffea Arabica and coffea canephora (robusta) - are grown on our farm. Our (final) coffee is a very unique blend of the two species.

The common procedure of harvesting coffee involves plucking all of the fruits as they ripen, sun-drying them and separating the skin from the bean, which is done by a mill. But this means that ripe, half-ripe and unripe beans will be mixed in the final product, as not all of them have ripened at the plucking stage.

In contrast to this method, our coffee is harvested only after ripening. This procedure requires at least five harvests instead of just one or two as usual. Additionally, the quantity of beans eaten by birds is a lot higher, because none of the seeds are removed from the plants before they have ripened. After harvesting, the ripe fruits are then peeled with the help of a simple machine called the "pulper." Unripe fruits would be crushed during this process. Therefore, 100 percent of our coffee consists of ripe fruits! The parchment is then kept for fermentation for up to three days.

Afterwards, the coffee is washed and sun-dried. As a thin skin remains on the beans, the coffee can now be stored for several years. For the final coffee product, this layer needs to be removed in the mill. After grading the coffee is ready for export. Only top-quality beans make it to our final product. As proper roasting is difficult to do in India, there are no direct coffee sales at our farms, but all sales are conducted from Germany.

::: Cardamom :::

Cardamom is also known as the "Queen of spices." Unfortunately it grows in plantations which are mainly responsible for the ecological disaster in the Western Ghats and the Cardamom Hills.

As cardamom is highly attractive to many pests, severe chemical treatment is used by almost all cardamom planters. Those practices have left one of the most beautiful parts of the world contaminated with the worst chemicals. In over ten years of trials and research we have found a way to live with all these pests. Contrary to usual organic practices of trying to find organic pesticides as alternatives to chemicals we have established a "natural" cardamom farm where most of the pests can be ignored. Taking the inspiring example of cardamom growing wild in the forests we found a way to live with most pests instead of adopting the conventional method of fighting them with pesticides. Almost all the pests are still present in our plantations, but the damage is reduced to an acceptable minimum.

Our yields have achieved almost conventional averages. The cardamom research institute in Myladambara [Iddukki dist. Kerala] has acknowledged our practices as the most successful organic methods in cardamom cultivation presently known in India. Being a highly work-intensive plant, our cardamom today requires less effort than conventional cardamom. It grows within a kind of forest, sustainable and without damaging the eco system. Decades of chemical treatment have left many cardamom plantations with exhausted soil, making it uneconomical to cultivate cardamom. The soil is unfertile, pests increase in diversity and intensity with every season. Yields decrease, naturally. Contrary to conventional methods, our yields are permanently increasing. It is not a question of which organic pesticide to use instead of a particular chemical pesticide, but one of harmony within the plantation.

This fact is very difficult to convey to local farmers.

::: Pepper :::

Pepper is grown on our farms as an intercrop between all other crops, usually on every tree available.

The special thing about our pepper is that it is processed entirely on our farms without using machines. We do not follow the usual practice of treating pepper with steam to ensure sterility. Heating spices will almost always impact negatively on taste and aroma. The pepper that we sell is cleaned by hand and thoroughly dried in the sun [less than 11% moisture]. In recent years our pepper has found many fans in kitchens throughout the world.

::: Vanilla :::

In recent years vanilla has found many fans throughout the world.

Belonging to the orchid family there is something very special about vanilla. It originates from Mexico and only there the flowers are pollinated by hummingbirds. Everywhere else in the world the flowers have to be pollinated by hand. For about two months this work has to be done every day in the morning hours. Processing vanilla beans is another crucial activity. It takes up to four months until a ripe fruit is ready for sale. Slow drying is absolutely essential for high-quality vanilla pods. Usually, small farmers do not process vanilla on their own. They sell the beans green to be processed by professional dryers. We, of course, process our vanilla on the farms to ensure a clean, high quality product. As we cannot handle the demand for vanilla on our own we add vanilla from known organic small farms.

Without doubt one of the most wonderful plants growing on earth, however the knowledge of Stevia is still not widespread.

Being about 300 times sweeter than sugar in its natural state and 20 times sweeter than refined sugar, Stevia has been used for centuries by South American Indians as a sweetener and as a medical remedy for almost all kinds of skin problems and is even utilized as an insect repellent.

Stevia is the alternative to sugar and aspartame. In the EU and the US Stevia is not permitted as a food product. Here are some more interesting facts about Stevia Rebaudiana:
